Original Day Family Cookbook
Ingredients:
1 tablespoon olive oil
1 small onion, finely chopped
3 medium carrots, sliced (½ pound)
¼ cup water
¼ cup orange juice
1 tablespoon grated orange rind
½ teaspoon gr. black pepper
1/8 teaspoon salt
1/8 teaspoon curry powder
2 tablespoon mayonnaise
1 teaspoon coarse-grained prepared mustard
Directions:
In 8" skillet, heat olive oil over low heat. Add onion; cover and cook til tender but not brown – about 7 mins. If desired, reserve several carrot slices for garnish. Stir remaining carrots, the water, orange juice and rind, pepper & salt, and curry powder into onion in skillet. Cover and let simmer til carrots are tender – 6-8 mins. Uncover mixture and increase heat to high. Cook, stirring occasionally, until liquid has evaporated--about 5 mins. Remove from heat. Let cool slightly. In container of food processor, with chopping blade, process carrot mixture til smooth. Add mayonnaise and mustard and process til combined. Press carrot pate into small bowl. Garnish, cover and refrigerate several hours or overnight.
