1 teaspoon lemon juice = ½ teaspoon of vinegar OR 1 teaspoon lime juice
1 cup self-rising flour = 1 cup all-purpose flour plus 1-½ teaspoon baking power and ¼ teaspoon salt
1 cup cake flour = 1 cup all-purpose flour minus 2 tablespoons
For thickening: 1 tablespoon cornstarch; 2 tablespoon flour (approx.); 2 teaspoon arrowroot; 1-3/4 tablespoon flour
Brown sugar = 1 tablespoon molasses to ½ cup white, mix well with fork pack tightly into cup same as with brown sugar
1 cup brown sugar = 1 cup white sugar plus 1 tablespoon maple flavoring
OR 1 cup white sugar and 4 tablespoon dark molasses. Mix well.
Powdered sugar = Blend ½ cup granulated sugar; makes 1 cup powdered
1 square (l oz.) unsweetened chocolate = 3 tablespoon unsweetened cocoa plus 1 tablespoon butter or margarine
1 cup buttermilk or sour milk = 1 tablespoon vinegar or lemon juice plus enough fresh milk to make a cup (let stand 5 min; beat well). Or replace with an equal amount of low-fat plain yogurt.
1 cup sour cream = 1 cup plain yogurt or 1 cup evaporated milk plus 1 tablespoon plain vinegar OR 1 cup cottage cheese mixed in blender with 2 tablespoon milk and 1 teaspoon lemon juice
Sweetened condensed milk =
1 cup instant non-fat dry milk solid
3 tablespoon melted butter or margarine
2/3 cup sugar
1-½ cups boiling water
Process in blender, store in refrigerator
1 tablespoon tomato paste = 1 tablespoon tomato catsup
1 tablespoon prepared mustard = 1 teaspoon dry mustard plus 1 tablespoon vinegar
1 cup corn syrup = 3/4 cup sugar plus ¼ cup water
¼ cup tahini = ¼ cup sesame seeds, whirl in blender until ground. Add tablespoon water and ½ teaspoon vegetable oil; whirl until it makes a smooth paste.
1 cup milk = ½ cup evaporated milk and ½ cup water
1 cake compressed yeast = 1 pkg or 2 teaspoon active dry yeast
angel hair pasta = vermicelli or oriental noodles
bay leaves = thyme
wild rice = white and brown rice with walnuts
For good results, you can substitute quick or old- fashioned rolled oats, corn wheat cakes or other unsweetened cereal for about half the flour in recipes when baking plain muffins and other quick breads.
