Original Day Family Cookbook
Ingredients:
1 medium head lettuce, torn into bite-sized pieces (4 cups)
2 cups diced unpeeled apple
1 11-ounce can mandarin oranges, drained (I have used regular orange sections)
1 7-oz. can tuna, drained and broken in chunks
1/3 cup coarsely chopped walnuts
Dressing:
½ cup mayonnaise
2 teaspoon soy sauce
1 teaspoon lemon juice

Variations:
HELOISE version: Mix one can of water-packed tuna with a grated small apple and the juice of one- half lemon. Place the serving on a big leaf of lettuce and top it with a spoonful of salad dressing and a dash of paprika, then add some green stuffed olives. Now...any leftover meats that you have left may be ground and added to the mixture along with a few ground sweet pickles. It doesn't really make any difference how much other leftover meats you add to this so long as you start with that one can of tuna fish. Even two or three different kinds of meats may be ground up and added to the mixture at the same time. Then, just enough salad dressing is added to give it the consistency desired.
