Original Day Family Cookbook
Ingredients:
¼ cup oleo
1 cup sugar
2 eggs, beaten
1-½ cups flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup milk
grated lemon rind
½ cup chopped nuts (optional)
Directions:
Cream oleo and add sugar gradually. Add beaten eggs. Add rind and dry ingredients alternately with milk. Mix well. Pour into greased floured loaf pan. Bake at 325o for one hour. (Or at 350o for 55 mins.) Allow to stand in pan on cooling rack. Pour 1/3 cup lemon juice over cracks in top of bread. Cool completely. Serve with cream cheese. Freezes very well. Allow to ripen 2-3 days.
