5 medium potatoes, peeled or with skins left on
½ of an onion, diced
2 cloves garlic, minced
1 cup shredded cheddar cheese
Salt and pepper, to taste
30 wonton wrappers
Sour cream, for garnish
Chopped green onions, for garnish
Using a fork, poke holes in the potatoes. Place the potatoes in a microwaveable dish. Pour water into the dish and on top of the potatoes. Put a damp paper towel over top and microwave for 10 minutes. Turn the potatoes, and then microwave another 5 to 10 minutes until tender.
While the potatoes are cooking, place a saucepan on the stove. Drizzle with olive oil and sauté the diced onions and minced garlic.
Once the potatoes are cooked, use a fork to mash them in a large bowl. Add in the onions, garlic, and cheddar cheese, and season with salt and pepper to taste.
Lay wonton wrappers out onto a flat surface. Use a scoop to place a spoonful of filling on one side of each wrapper. Dip your finger in water and use it to wet the outer edges of each wrapper. Fold the wonton wrapper over to form a triangle, and seal with your fingers.
In a saucepan on medium heat, drizzle olive oil and quickly pan fry pierogis, 5 at a time, until golden on each side. Serve warm with sour cream and chopped green onions.
