Sloppy Joes

6-8 servings

2 tablespoons Vegetable oil, divided

1/2 white onion, diced

1 large carrot, diced

1 stalk celery, diced

1/2 green bell pepper, diced

1 cup Crumbles

1 cup crumbled tofu (frozen, then defrosted) (tofu worked well)

OR 1.5 cup cooked lentils (0.6 cup/112 g dry (PC = 1.5 cup water and lentils; 13 min HP; QR)

beef broth

1/2 to 3/4 cup ketchup

2 teaspoon vegetarian Worcestershire sauce

1 teaspoon mustard

1 teaspoon liquid smoke

sea salt and black pepper

  1. In a large skillet, heat 1 tablespoon Vegetable oil over medium-high heat. Sauté the Crumbles and tofu. Saute onion until translucent. Add carrots, celery, and bell pepper and cook over medium heat for 5 minutes.
  2. Add lentils (if using), ketchup, Worcestershire sauce, and mustard. Turn heat to low and stir. Season to taste with salt and pepper.
  3. Serve sloppy joe mixture between buns.
