Meatloaf

6 servings.  Make 2 loaves and just bake on parchment paper for ~20 mins at 375F until 160F

6 oz Impossible meat

2 oz dry lentils and 6 oz water (15 - 20 min pressure cook)

1/2 cup onion finely chopped

1 large egg, beaten

1 tsp garlic cloves minced

1 Tbsp ketchup [sub tomato paste/sauce/etc for low sodium]

1 Tbsp fresh parsley finely chopped

1/3 cup Panko breadcrumbs

2 tbsp milk

1/2 tsp salt or to taste [0 for low sodium]

1 tsp Italian seasoning

1/8 tsp ground black pepper

1/8 tsp ground paprika

Meatloaf Sauce Ingredients:

3 tbsp (51g)  ketchup (was 1/3 but that was too much)

1/2 tsp mustard

1/2 tsp white vinegar

1 tsp brown sugar

1/3 tsp garlic powder

1/4 tsp onion powder

1/8 tsp ground black pepper

1/8 tsp salt [0 for low sodium]

Line a 9”x5” loaf pan with parchment paper and preheat oven to 375°F. Can just put on a baking tray with parchment paper without a loaf pan.

In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.

In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf.

Bake meatloaf at 375˚F for ~25-30 until 160F.
