Wet Ingredients:
1/2 c red wine
1/4 c peanut butter
1/2 onion
2 Tbls miso
1 Tbls maple syrup
1 Tbls liquid aminos or soy sauce
1 1/2 tsp liquid amoke
3 cloves garlic
Combine all the wet ingredients in a food processor or blender until completely liquefied.
Dry Ingredients:
1 3/4 c vital wheat gluten
1/4 c nutritional yeast
1 1/2 Tbls smoked paprika
1 1/2 tsp fresh ground black pepper
1 1/2 tsp ground dry mustard
1 1/2 tsp fennel seed
1 1/2 tsp red pepper flakes
1 tsp sea salt
Combine the dry ingredients with the liquid mixture and pulse until a dough forms. Divide the dough into fourths then shape into logs, wrap in a double layer of well oiled foil, then bake in a preheated 325° oven. Allow to cool completely then slice.
