Lentil Spinach Salad with Avocado
2 decent sized servings for a side
1/2 cups uncooked green lentils
1.25 cups water (PC on high for 12 mins; QR)
1 avocado
chopped red onion
Juice from 1 lime
spinach or kale
2 tsp sunflower seeds
Sea salt to taste
Cook lentils and once the lentils are cooled, add them to a serving bowl with the rest of the ingredients. Serve immediately or refrigerate for later.
