Cook Idaho potatoes fully or it takes a very long time to cook in curry.

0.50 medium, Purple Onion
1 teaspoon, Cumin, ground
1 teaspoon, Cinnamon
1 leaf, Bay Leaf
6 g, Bouillon, Vegetarian, No Chicken Base
1 tablespoon, Tomato paste
6 tsp, Curry Powder
1 potato (148g/5.3oz.), Idaho Potatoes
1 container (1 4/5 cups ea.), Diced No Sodium Added Tomatoes
5 ounce, Spinach, raw, fresh
3 tablespoon, Sour Cream (or 1/3 cup coconut milk)
14 ounce, Extra Firm tofu
Saute veggies, add tomatoes and spices. Blend. Cook tofu and potatoes separately and combine.
