Black Bean Taco Pinwheels

Makes 8 tortillas worth or roughly 64 pinwheels

15 oz can of refried beans

1/4 cup salsa

8 oz cream cheese, softened

1/2 cup sour cream

1 packet taco seasoning

1/2 cup shredded cheese

1/4 cup green onion, diced

1 avocado, diced

1 roma tomato, seeds removed and diced

1 small can diced chilies

8 taco size tortillas

Mix salsa into refried beans

Mix cream cheese, sour cream and taco seasoning.

Fold cheese and vegetables into cream cheese/sour cream mix.

Spread a portion of bean mixture onto a tortilla.

Spread a portion of the cream cheese mixture over beans and roll up tortilla.

Refrigerate for 1-2 hours and then slice into pinwheels.
