Lemon Kale Raw Salad
1 bunch curly green kale
1 tsp salt
1 tsp lemon juice
1 tbsp olive oil
Remove stems and tear kale into bite sized pieces. Place in a large bowl. Sprinkle 1 tsp sea salt over the kale and begin to massage it with your hands. The salt will begin to break down the cell walls of the kale making it tender.
Drizzle some olive oil and a teaspoon of lemon juice, toss all together. Top with sliced avocado, tomatoes and your favorite raw vegetables.
