Pressure Cooked Pineapple Fried Rice

  • 2 tablespoon Oil (Olive Oil + Sesame Oil)

  • 1 tablespoon Chili Oil (optional)

  • 1 small Onion diced or sliced

  • ½ Bell Pepper Green & Red

  • 1 cup Cabbage diced

  • 4 cloves Garlic minced

  • ½ teaspoon Ginger grated or Ginger Powder

  • ½ Pineapple diced

  • 1 cup Rice rinsed & soaked

  • 1 cup Water Broth

  • Salt

  • egg

  • cashew topping

Sauce

  • 2 tablespoon Soy Sauce

  • 2 tablespoon Rice Vinegar or Apple cider vinegar or lemon juice

  • 1-2 tablespoon Red Chili Paste or any other chili sauce (sub green chili paste)

  • 2 tsp. ​​Thai curry powder

  • 1/4 tsp MSG

  • 1 tsp Sriracha (add)

  • 1 tsp sweet chili sauce

  • 1/4 cup coconut milk

  1. Sauté veggies.

  2. Add Ginger & Garlic and continue to cook for 1 minute.

  3. Cancel Saute and add the sauce with the veggies and mix.

  4. Add Rice & Water along with Salt and close the lid.

  5. Pressure cook for 4 minutes at HIGH pressure level.

  6. When timer beeps, NPR (no pressure release) for 10 minutes and then Quick Release.

  7. Fluff the rice and stir in pineapple pieces gently.

  8. Garnish with some Green Onion and cashews!
