Curry Lentils and Sweet Potatoes

Serves 4

1 cups lentils

3 cups vegetable broth (reduce to 2 cups if using crushed tomatoes or it will be soupy)

1 can crushed tomatoes

1 large finely diced sweet potato

1 med red bell pepper, diced (1 1/2 cups)

1 med onion, chopped

1 cup fresh green beans, thinly sliced

2 Tbs. hot sesame oil

2 Tbs. minced fresh ginger

2 cloves garlic, minced (2 tsp.)

2 tsp. curry powder

Pressure cooker - Saute veggies, add liquid, then lentils, then everything else on top. Cook for 12 mins high pressure; QR. 1:3 lentil:liquid ratio (soupy when adding can of crushed tomatoes, but was good).
