Hummus

1 tbsp parsley leaves (DON'T USE TOO MUCH)

2 tbsp diced garlic

1 can (19 ounces) chickpeas, rinsed and drained

1 ½ tablespoons tahini

2 tbsp fresh lemon juice

¼ cup water

1 teaspoon ground cumin

3 tbsp extra virgin olive oil

kosher salt and freshly ground black pepper to taste

Try this method: Use Goya canned beans or rehydrated dried beans. First a rough chop in the food processor about 15- 30 sec with whatever spices and other solid ingredients you are using. then make sure you make an emulsion of your mixture of Tahini and oil once that is really well mixed to an even consistency (I highly recommend Krinos brand but Ziyad or Joyva are my backups) then with the processor going, slowly stream in your water/lemon juice mixture until there is a "pop" or stutter when the texture changes. then let that go for about a minute and then start to stream in the tahini/oil emulsion and let it run until desired smoothness (about a minute or two)

  1. Chop the parsley for 5 seconds; remove and reserve.
  2. With machine running, drop garlic through feed tube.
  3. Process until finely chopped, about 5 seconds.
  4. Add chickpeas, tahini, lemon juice, water, cumin and reserved parsley to work bowl; process until smooth, 1½ to 2 minutes, stopping to scrape work bowl as needed one or two times.
  5. With the machine running, add the olive oil in a steady stream and process until the mixture is smooth and creamy.
  6. Taste and season with kosher salt and freshly ground pepper.

Alternatives:

Parsley hummus – blend in ½ cup fresh parsley; sprinkle on top

Sun Dried Tomato hummus – blend in ¼ cup sun dried tomatoes; top with olive oil and paprika

Roasted red pepper hummus – blend in ¾ roasted red peppers; sprinkle with paprika and parsley

Spicy hummus – blend in 1 tsp cayenne pepper with 2 tsp olive oil and ½ tsp garlic; sprinkle with paprika and parsley

Green chili and cilantro hummus – blend in 3-5 tbs green chilies and ½ cup fresh cilantro; garnish with green chilies and cilantro
