Tortellini Soup

3 cups vegetable broth

3 cups water

½ teaspoon dried Italian seasoning

9 oz cheese tortellini

3 large carrots, peeled and sliced into thin coins

3 celery stalks, thinly sliced

1 15 oz can diced tomatoes

1 bag 6 oz baby spinach

Grated parmesan cheese (optional)

  1. In a large pot, bring broth, water, and seasoning to a boil.
  2. Add carrots and celery and simmer until almost tender thoughout.
  3. Add the remaining ingredients and simmer for 4 minutes or until the vegetables are tender or spinach is wilted.
  4. Serve with parmesan cheese if desired.
