1 g ground cumin

1 g freshly ground black pepper

1 tbsp minced fresh oregano leaves

12 ml fresh orange juice from 1/10 - 1/5 oranges

6 ml fresh lime juice

6 ml extra-virgin olive oil

Kosher salt

For the Pork and to Finish:

1 can jackfruit ( (was - 1 (6-8 pound; 3-3.5kg) boneless pork shoulder roast, rind removed)

1 tsp finely chopped fresh mint leaves
