Jo Jo's Favorite Banana Muffins

2 cups all-purpose flour
1 cup white sugar
1 cup mashed ripe banana
½ cup margarine
2 eggs
½ - 1 cup walnuts
1/3 cup milk
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
- In a medium bowl mix flour, baking powder, baking soda, salt, and cinnamon and set aside.
- In a separate bowl cream margarine and sugar, add eggs and mix until smooth. Stir in milk and mashed banana and mix well.
- Fold in flour mixture into the liquid ingredients until combined.
- Fill greased muffin tins or loaf pan two-thirds of the way full.
- Bake in a preheated 350 degree F (175 degrees C) oven for 25 to 30 minutes for muffins or for loaf.
