Spinach, Olive & Sun-dried Tomato Quesadilla

1/3 cup cheese

sauteed spinach (one large handful, cooked with a touch of oil)

1/4 cup chopped kalamata olives

1/4 cup chopped sun-dried tomatoes

In a large skillet, add a touch of oil and one tortilla (medium heat) then arrange the ingredients across the tortilla.

Lay a second tortilla over it.

Cook until bottom is lightly golden brown, then very carefully flip with a spatula and cook another minute or two until the cheese is melted and the second tortilla is crispy
