178.6 g bread flour
122.8 g water
1.8 g Instant yeast
4.5 g salt
3.6 g olive oil
168 g; 6 ounces grated full-fat, low moisture (dry) mozzarella cheese
Combine flour, salt, yeast, water, and oil in a large bowl and mix
Cover and rise for 8-24 hrs.
Use well-floured hands and tucking the dough underneath itself, rotating it until it forms a tight ball.
Coat pan with oil; roll dough in oil and flatten dough into pan; cover and rise for 2 hr.
Press dough, pop large bubbles; lift to remove air bubbles underneath.
Bake at 550F for 12-15 mins.
