Ready in 1-1.5 hours; 1675 calories; 280 in 6 servings
1 Cincinnati style chili package (1.5 packages for PC)
6 cups water (6.5 cups if using dry beans in PC)
6 oz can tomato paste
3 cans black beans, drained (1 lb bag of dried black beans for PC)
3/4 cup cooked rice
Pressure cooker:
Sauté onions and garlic in oil in PC, add beans, uncooked rice and water and cook under high pressure for 40 mins; 10 min NPR.
There will be remaining water in PC, but keep it in there and mash some of the beans with a potato masher.
Add in spices and tomato paste. Add additional water (at least 1.5 cups) after cooking until desired consistency is reached.
Stovetop:
Add water, chili package and tomato paste to large pot and mix.
Add rice and beans and mash some of the beans with a potato masher.
Bring to boil and simmer until thickened (1-1.5 hours).
