Pesto Tortellini Soup
1 small onion
2 cloves garlic
1 Tbsp butter
5 C vegetable broth
1 9 oz package tortellini
2 C frozen mixed veggie
1/4 C prepared pesto
Parmesan cheese
- Saute onion and garlic in butter.
- Add broth and tortellini to pan.
- Boil until tortellini is done.
- Add vegetables.
- Simmer until veggies are heated through.
- Add pesto and garnish bowls with parmesan cheese.
