Pesto Tortellini Soup

1 small onion

2 cloves garlic

1 Tbsp butter

5 C vegetable broth

1 9 oz package tortellini

2 C frozen mixed veggie

1/4 C prepared pesto

Parmesan cheese

  1. Saute onion and garlic in butter.
  2. Add broth and tortellini to pan.
  3. Boil until tortellini is done.
  4. Add vegetables.
  5. Simmer until veggies are heated through.
  6. Add pesto and garnish bowls with parmesan cheese.
