Pasta Pascal

Cook Time: 15 Minutes Ready In: 25 Minutes

Yields: 4 servings

1/3 cup olive oil

4 cloves garlic, minced

1 onion, chopped

4 roma (plum) tomatoes, diced

1 zucchini chopped

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

salt and pepper to taste

1 pound angel hair pasta

1. In a medium skillet over medium-high heat, saute garlic in oil 1 to 2 minutes. Stir in onion and zucchini and cook 2 minutes more. Stir in tomatoes, oregano, basil, salt and pepper. Reduce heat to medium-low and let simmer.

2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 3 to 5 minutes or until al dente; drain.

3. Toss hot pasta with tomato mixture. Serve.
