Notes: don't make strawberries ahead and they get runny
puff pastry thawed
8 oz (~1.3 cups) sliced strawberries
2.2 tbsp sugar
1.1 tbsp cornstarch
1 egg
1 tbsp water
red dye
Preheat oven to 400F. Line a baking sheet with parchment paper.
Cut pastry sheets into 4 squares and place on baking sheet.
Combine strawberries, sugar and cornstarch.
Top each pastry square with strawberries. Fold corners up over fruit, pinching edges together but leaving a gap at the top.
Lightly brush pastry with egg wash and sprinkle with additional sugar (optional).
Bake for about 12 minutes or until golden. Let rest for 5 minutes and serve warm.
