1.5 cups water
9 g Better Than Bouillon Bouillon, Vegetarian, No Chicken Base
1 cup Bob's Red Mill Organic Farro Grain
1/2 yellow onion, chopped
2 cloves of garlic, minced
2 Field Roast Vegetarian "Italian" Grain Meat Sausage
1 can Kroger No Salt Added Diced Tomatoes
1 1/4 teaspoons kosher or coarse sea salt
1/4 teaspoon red pepper flakes (to taste)
1 tsp tablespoon olive oil
4 large kale leaves, stems removed and leaves torn into large pieces
5-10 basil leaves, cut into thin ribbons
Grated parmesan cheese, for serving (optional)
IP: 14 min HP, 10 min NR for Bob's farro. 14 min HP, 10 min NR for semi-pearled farro.
Place broth and farro in a large skillet to presoak (5 to 10 minutes sufficient).
Start heating over medium heat and add oil, onion, garlic, sausage and spices.
Bring uncovered pan (no lid necessary) up to a boil, then reduce to a gentle simmer, stirring occasionally for about 20 minutes.
Add tomatoes and kale leaves and toss them into the mixture and cook until everything is done.
Transfer to a wide serving bowl. Drizzle farro lightly with additional olive oil, scatter with basil and parmesan. Eat immediately.
