Deluxe Potato Patties Jan Peterson
8 bacon slices, cut up
2 T. minced green onions
4 medium potatoes peeled
1/4 tsp. salt
1 cup shredded Swiss cheese
dash pepper
1 egg
Parsley sprigs for garnish
In skillet over medium heat, cook bacon until crisp. With slotted spoon, remove bacon to paper towels. Meanwhile into large bowl, coarsely shred potatoes, stir in cheese, egg, onions, salt, pepper and bacon until well mixed. In skillet in hot bacon grease, drop four 1/3 cup mounds of potato mixture. Using a pancake turner, press each mound into a 3 inch patty. Fry patties 8 to 10 minutes until browned, turning once. Remove patties to platter, keep warm. Repeat with remaining potato mixture. Garnish with parsley sprigs.
