Blueberry Crumble Bars Paula Gardina
11/2 cups flour 1 1/2 cups quick cook oatmeal
1 1/2 cups sugar (divided) 3/4 cup cold butter
2 cups fresh or frozen blueberries 2 Tbsp. cornstarch
1/2 tsp. cinnamon 2 Tbsp. Lemon juice
1/2 tsp. baking soda
Turn on oven to 375 degrees. Grease 13 x 9 pan. Combine flour, oatmeal, 1 cup of the sugar cinnamon and baking soda in a large bowl. Cut butter into flour mixture until it resembles course crumbs. Reserve about 2 cups of the flour mixture for the top. Press remaining mixture into pan to form a crust.
Bring blueberries, remaining 1/2 cup sugar, cornstarch and lemon juice into pan and cook until it comes to a boil, stirring constantly until mixture becomes thickened, about 2 minutes. Pour over evenly over crust and sprinkle reserved crumb mixture over the top. Bake until top becomes slightly browned in the preheated oven, about 25 minutes. Cool before cutting into bars.
