1 Tbsp. butter
1 small onion chopped
1 1/2 cups sliced mushrooms (I used canned)
4 eggs
1 cup milk
1/8 tsp. pepper
1/2 tsp. salt
3/4 cup chopped fresh spinach
1/4 cup chopped red bell pepper
1 Tbsp. or more Parmesan Cheese
Press pastry in bottom and up side of ungreased 9 inch quiche dish or glass pie plate. Bake 12 to 14 minute or until crust just begins to brown and is set. Reduce oven to 325 degrees.
Meanwhile, in skillet, melt butter over medium heat. Cook onion, mushrooms, if fresh) about 5 minutes, stirring occasionally. Beat eggs, milk, salt and pepper until well blended. Stir in spinach, pepper, mushrooms spinach and cheese. Sprinkle Parmesan cheese over the top. Pour into partially baked crust. Bake 40 to 45 minutes or until knife inserted in center comes our clean. Let stand 10 minutes before cutting.
