Peanut Butter Cookies Dipped in Chocolate Anna Larsen
1 cup brown sugar
1 cup white sugar
1 cup shortening or lard
1 cup peanut butter
2 eggs
2 1/2 to 3 cups flour
1 tsp. baking soda
1 tsp. salt
Melt shortening over low heat' stir in peanut butter and all other ingredients. Roll into balls the size you like, flatten with fork to bake. Bake in 350 degrees oven about 12 to 15 minutes until light brown. When cool, dip the cookies in melted chocolate about half the cookie and lay on wax paper until chocolate is hard. I put the cookies in fridge to harden. It goes faster than leaving them lay until set. Makes a lot.
(we dipped the cookies in 1 pkg. chocolate chips melted with 1 tsp. of oil and tried to get more on the front than the back.) They are excellent!
