Chocolate Chip Pecan Cherry Cookies Karen Breiwick
10 oz. Ghirardeli 60% Bittersweet Chocolate Baking Bar
11 1/2 ounces. Ghiradelli Milk Chocolate Baking Chips
1 cup dried Cherries
1 cup pecans or walnuts coarsely chopped
1/2 cup butter, softened
1 cup brown sugar, packed 1/2 cup sugar
4 large eggs at room temperature 1 tsp. vanilla
2 1/4 cups flour 1 tsp. baking powder
1/2 tsp. baking soda 1/2 tsp instant coffee
Melt bittersweet chocolate bar (broken into pieces) slowly on stove. Beat butter, sugars, baking powder, baking soda, instant coffee until light and eggs until fluffy. Pour in half the flour and melted chocolate and mix, add the other half of flour and melted chocolate until well mixes. Stir in chocolate chips, dried cherries and nuts.
