Chicken Breast Casserole Ione Oertel
2 whole chicken breasts
1 can cream of chicken soup
1 box frozen broccoli or 1/2 bag chopped
1/2 cup mayonnaise
1/2 tsp. lemon juice
1/2 tsp. curry powder
1/2 cup bread crumbs
1/2 cup cheddar cheese grated
Few chunks of butter
Simmer breasts until tender in salt water. Cup up chicken and add to cooked broccoli drained. Mix soup, mayonnaise, lemon juice and curry powder. Sprinkle with bread crumbs, cheese and butter. Bake at 350 for 25 minutes. Can substitute asparagus for broccoli.
