Maple Pecan Refrigerator Cookies Carolyn McCabe
1 cup soft butter ½ cup sugar
3 Tbsp. real maple syrup 1 large egg yolk
½ tsp vanilla ½ tsp. maple extract
2 cups flour 1 ½ cup chopped pecans
Beat butter 3 minutes until creamy – add sugar gradually – add syrup, egg yolk, vanilla and extract. Beat well and stir in flour and pecans (mix pecans and flour together). Divide dough in half and shape into logs 2 inches in diameter. Wrap in plastic or wax paper. Refrigerate until firm. Cut logs into
½ inch slices and arrange on greased cookie sheet. Bake at 350 degrees 18 to 20 minutes
These cookies do not need frosting, but the following is great on them.
1/2 cup salted butter 2 cups Powdered sugar
2 tsp. Pure Maple Syrup 1/2 tsp Pure Vanilla
2 Tbsp Whipping Cream
More powdered sugar or whipping cream can be added slowly to get the right consistency.
Sprinkle the top with cinnamon if desired.
