Rhubarb Dream Bars Sue Oertel/Ginny White
2 cups flour 2/3 cup confectioners sugar
1 cup butter softened 1 ½ cup sugar
1 ½ tsp. salt ½ cup flour
4 eggs beaten 4 ½ cup chopped rhubarb
Preheat over to 350 degrees. In a medium bowl, mix together 2 cups flour, confectioners sugar and butter until it forms a dough. Press into a 9 x 13 baking pan greased. Bake for 10 minutes or until golden brown.
Whisk together the white sugar, salt, flour and eggs in a large bowl. Stir in rhubarb to coat. Spread over baked crust when it comes out of the oven. Bake for 35 minutes or until rhubarb is tender. If you use frozen rhubarb, bake it 45 minutes. Watch the edge of the crust so it does not over brown. Cool and cut into squares to serve. Serve with ice cream or whipped cream. They are also good without either one!
