Fresh Apple Cookies Jeri Lynn Scott
1/2 cup brown sugar
1/2 cup sugar
1/4 cup butter
1/4 cup shortening
1 large apple of choice - I like Granny Smith
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Preheat oven to 350 degrees
Peal and grate apple
Sift dry ingredients in a separate bowl
Cream sugars, butter, shortening and vanilla
Add grated apple
Gradually add dry ingredients
If dough appears slightly dry and doesn’t come together, let it sit for a bit to allow the sugar to pull the juice from the apples.
2 tablespoons sugar
1/2 teaspoon ground nutmeg
1/4 teaspoon cinnamon
Make walnut sized balls and roll into sugar mixture.
Place on greased pans and bake for 8 - 10 minutes. Cookies will be golden brown and appear crackled.
Let cookies set for 5 minutes before transferring to cooling rack
