Blueberry Pie (fresh) Jan Peterson
5 cups fresh blueberries
1 Tbsp lemon juice
1 cup sugar
1/2 cup flour
1/8 tsp. salt
1/2 tsp. cinnamon
2 Tbsp. butter
1 large egg, beaten] For top of crust
1 tsp. sugar] "
You may use refrigerated pie crust or make your own. (I like home-made the best).
Sprinkle berries with lemon juice; set aside. Put one half of pastry in 9" pie plate. Combine 1 cup sugar and next 3 ingredients; add to berries, stirring well. Pour into pastry shell and dot with butter. Place second pie crust over filling and crimp edges. Cut slits in top of crust to allow steam to escape. brush top of pastry with beaten egg and sprinkle with 1 tsp. sugar. Bake at 400 degrees for 35 minutes until golden brown. Cover edges with foil to prevent overbrowning, if necessary.
