These Moist Chocolate Muffins are a delightful treat, perfect for breakfast or as an afternoon snack. The combination of yogurt, milk, and vegetable oil ensures a moist texture, while cocoa powder and chocolate chips provide a rich chocolate flavor. They're even better the next day, making them ideal for meal prep or sharing with friends and family.
2 cups all-purpose flour
1 cup white sugar
½ cup unsweetened cocoa powder
1 teaspoon baking soda
¾ cup semisweet chocolate chips (divided)
1 cup plain yogurt
½ cup milk
½ cup vegetable oil
1 large egg
1 teaspoon vanilla extract
Directions
Preheat the Oven: Set your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
Prepare Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and ¾ cup of chocolate chips.
Mix Wet Ingredients: In a separate bowl, whisk together the yogurt, milk, vegetable oil, egg, and vanilla extract until smooth.
Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about ¾ full. Sprinkle the remaining ¼ cup chocolate chips on top of each muffin.
Bake: Place the muffin tin in the preheated oven and bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the muffins to cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.
