Ingredients:
1 cup all-purpose flour
1 tablespoon matcha green tea powder
2 teaspoons baking powder
¼ teaspoon salt
1 cup cashew milk
1 tablespoon cashew milk (extra for batter)
1 large egg
2 tablespoons olive oil
2 teaspoons vanilla extract
¼ cup white chocolate chips
Directions:
In a large bowl, whisk together flour, matcha powder, baking powder, and salt.
Make a well in the center and add 1 cup plus 1 tablespoon of cashew milk, egg, olive oil, and vanilla extract.
Gently whisk until just combined; small lumps are okay.
Fold in the white chocolate chips.
Lightly grease a small pan and heat over medium-low heat.
Spoon 2 to 3 tablespoons of batter into the pan, spreading slightly.
Cook until small bubbles form on top, about 1 minute.
Flip and cook until edges are lightly golden, about 1 more minute.
Repeat with remaining batter.
