Rainbow Vanilla Cheesecake Cookie Bars
These colorful cheesecake cookie bars combine a crunchy vanilla cookie crust with creamy, vanilla-flavored cheesecake swirled with vibrant rainbow colors. They’re perfect for parties or any time you want a fun, eye-catching dessert.
Ingredients:
Cooking spray
30 vanilla sandwich cookies (like Golden Oreos®), crushed
2 (12 ounce) packages cream cheese, softened
1½ cups white sugar
3 large eggs
3 tablespoons sour cream
3 tablespoons all-purpose flour
1⅓ teaspoons vanilla extract
Gel food coloring: red, orange, yellow, green, blue, and violet
Directions:
Preheat oven to 325°F (165°C). Spray a 9x13-inch baking pan with cooking spray.
Press the crushed cookies into the bottom of the pan to form a crust.
In a large bowl, beat cream cheese and sugar until creamy.
Add eggs one at a time, beating well after each addition.
Mix in sour cream, flour, and vanilla extract until combined.
Spoon half of the batter over the crust.
Divide remaining batter evenly into six bowls.
Add a few drops of each food coloring to separate bowls to create different colors.
Spoon colored batters onto the plain batter in random patterns.
Use a knife to gently swirl the batters together for a marbled effect.
Bake for 40 to 45 minutes, until the center jiggles slightly.
Cool on the counter for 2 hours.
Cover and refrigerate at least 4 hours before cutting into 24 squares.
