Ingredients:
1½ pounds boneless, skinless chicken thighs
1 cup cornflake crumbs (or other ready-to-eat cereal crumbs)
1 teaspoon paprika
½ teaspoon Italian herb seasoning
¼ teaspoon garlic powder
¼ teaspoon onion powder
2 eggs
2 tablespoons milk
Honey mustard, barbecue sauce, or teriyaki sauce (optional, for dipping)
Directions:
Preheat oven to 400°F (200°C).
Remove skin and bones from chicken thighs and cut into bite-sized pieces.
Crush cornflakes into fine crumbs using a rolling pin or food processor.
Mix crushed cornflakes with paprika, Italian herb seasoning, garlic powder, and onion powder.
In a separate bowl, whisk eggs and milk.
Dip chicken pieces into egg mixture, then coat with cornflake mixture.
Place coated chicken pieces on a lightly greased baking sheet without touching.
