This Lemon Blueberry Bread is a delightful quick bread that combines the tartness of lemon with the sweetness of blueberries. It's perfect for breakfast, brunch, or as a sweet snack throughout the day.
For the bread:
1 cup white sugar
⅓ cup melted butter
2 large eggs
3 tablespoons lemon juice
1½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
½ cup milk
1 cup fresh or frozen blueberries
½ cup chopped walnuts (optional)
2 tablespoons grated lemon zest
For the glaze:
1 cup powdered sugar
2 tablespoons lemon juice
Preheat the oven to 350°F (175°C). Lightly grease an 8x4-inch loaf pan.
In a large mixing bowl, beat together the sugar, melted butter, eggs, and lemon juice until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
Gently fold in the blueberries, walnuts (if using), and lemon zest.
Pour the batter into the prepared loaf pan. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
While the bread is baking, mix the powdered sugar and lemon juice in a small bowl until smooth.
Once the bread has cooled for about 10 minutes, drizzle the glaze over the top.
Allow the bread to cool completely in the pan before slicing and serving.
