Ham with Red Eye Gravy is a classic Southern dish that combines the rich flavors of country ham with a savory gravy made from the pan drippings and black coffee. This simple yet flavorful dish is often enjoyed for breakfast or dinner, typically served with biscuits or grits.
4 slices country ham
2 tablespoons butter
1 cup strong black coffee
Salt and pepper to taste
In a large skillet over medium heat, melt the butter.
Add the ham slices and cook until browned on both sides, about 3 minutes per side.
Remove the ham from the skillet and set aside, keeping warm.
Pour the black coffee into the skillet, scraping up any browned bits from the bottom of the pan.
Bring the mixture to a boil and cook until it has reduced by about half, about 5 minutes.
Season with salt and pepper to taste.
Return the ham to the skillet and spoon the gravy over the top.
Serve immediately with biscuits or grits.
