These Quick Cinnamon Rolls are a warm, comforting treat with soft, fluffy dough and a sweet cinnamon filling. Perfect for breakfast or brunch, they bake up fast and finish with a creamy, dreamy cream cheese frosting.
Ingredients:
Dough:
2 cups all-purpose flour (plus more as needed)
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon kosher salt
3 tablespoons unsalted butter, softened
⅔ cup whole milk
Filling:
¼ cup white sugar
¼ cup light brown sugar
2 teaspoons ground cinnamon
Cream Cheese Frosting:
1 cup confectioners' sugar
4 ounces cream cheese, softened
¼ cup unsalted butter, softened
½ teaspoon vanilla extract
Directions:
Preheat oven to 400°F (200°C). Lightly grease an 8-inch square baking dish with 1 tablespoon melted butter.
In a large bowl, whisk together flour, white sugar, baking powder, and salt.
Work softened butter into the flour mixture until butter pieces are about the size of lentils.
Pour in milk and stir until dough forms. Turn out onto a floured surface and knead about 1 minute until smooth. Roll dough into a 12x8-inch rectangle.
Brush remaining 1 tablespoon melted butter over dough. Mix sugars and cinnamon; sprinkle evenly over dough.
Roll dough tightly from long side, pinch seam to seal. Cut into 9 equal slices and place in prepared dish.
Bake about 20 minutes or until golden brown.
While baking, beat confectioners’ sugar, cream cheese, butter, and vanilla until smooth.
Spread frosting on warm rolls and serve.
