2 cups white sugar
1 cup butter, softened
15 ounces ricotta cheese
2 large eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
For the glaze:
1½ cups confectioners' sugar
3 tablespoons milk
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, beat together the sugar and butter until light and fluffy.
Add the ricotta cheese, eggs, and vanilla extract to the mixture and beat until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
Drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10–12 minutes, or until the edges are lightly golden
While the cookies are baking, prepare the glaze by whisking together the confectioners' sugar and milk until smooth.
Allow the cookies to cool on a wire rack before glazing. Once cooled, drizzle the glaze over the cookies and let it set.
