This delightful dessert combines the sweetness of ripe peaches with the tartness of fresh raspberries, all topped with a golden, fluffy cobbler crust. It’s a perfect treat for any occasion, offering a comforting and flavorful experience.
For the Fruit Filling:
4 ripe peaches, peeled and sliced
200g fresh raspberries
75g caster sugar
For the Cobbler Topping:
200g plain flour
2 teaspoons baking powder
75g caster sugar
100g cold butter, cubed
150ml milk
Optional: 2 tablespoons demerara sugar
Optional: 2 tablespoons flaked almonds
Preheat the oven to 160°C (fan oven) or 170°C (conventional oven).
In a bowl, combine the sliced peaches and raspberries with the caster sugar. Gently toss to coat the fruit evenly. Transfer the mixture to an ovenproof baking dish.
In a large bowl, mix the plain flour, baking powder, and caster sugar. Add the cold butter cubes and rub them into the dry ingredients using your fingertips until the mixture resembles coarse crumbs. Pour in the milk and stir until the dough just comes together.
Spoon dollops of the cobbler topping over the fruit mixture, leaving some gaps for the fruit to peek through. If desired, sprinkle the top with demerara sugar and flaked almonds.
Place the baking dish in the preheated oven and bake for 25–30 minutes, or until the topping is golden and the fruit is bubbling around the edges.
Allow the cobbler to cool slightly before serving. It’s delicious on its own or served with a scoop of vanilla ice cream or a dollop of whipped cream.
