6 ears of corn, husked and cleaned
3 large tomatoes, diced
1 large onion, diced
¼ cup fresh basil, chopped
¼ cup olive oil
2 tablespoons white vinegar
Salt and pepper to taste
Bring a large pot of lightly salted water to a boil.
Add the corn and cook for 7 to 10 minutes, or until tender.
Drain the corn and allow it to cool.
Once cooled, cut the kernels off the cob using a sharp knife.
In a large bowl, combine the corn kernels, diced tomatoes, diced onion, and chopped basil.
In a separate small bowl, whisk together the olive oil, white vinegar, salt, and pepper.
Pour the dressing over the corn mixture and toss gently to combine.
Chill the salad in the refrigerator until ready to serve.
