¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried oregano
4 medium skinless, boneless chicken breast halves, pounded ¼ inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
½ cup Marsala wine
¼ cup cooking sherry
In a shallow dish, combine the flour, salt, pepper, and oregano. Dredge each chicken breast half in the flour mixture, coating both sides evenly.
In a large skillet, heat the butter and olive oil over medium heat. Add the coated chicken breasts and cook until lightly browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms and sauté until they release their juices and become tender, about 5 minutes.
Pour in the Marsala wine and cooking sherry, stirring to combine. Bring the mixture to a boil, scraping up any browned bits from the bottom of the skillet.
Return the chicken breasts to the skillet, spooning some of the sauce and mushrooms over the top. Reduce the heat to low, cover, and simmer until the chicken is cooked through and the sauce has thickened slightly, about 10 minutes.
