Crème brûlée is a classic French dessert known for its rich custard base and a crisp, caramelized sugar topping. This simplified version offers a smooth, creamy texture with a delightful crunch, making it an elegant treat for any occasion.
3 large egg yolks
¼ cup white sugar
1 teaspoon vanilla extract
1 cup heavy cream
2 tablespoons white sugar
1 tablespoon brown sugar
Preheat Oven: Set your oven to 300°F (150°C).
Prepare Custard: In a heatproof bowl, whisk together egg yolks, ¼ cup white sugar, and vanilla extract until smooth.
Heat Cream: In a saucepan over medium-low heat, bring the heavy cream just to a simmer.
Combine Cream and Egg Mixture: Gradually whisk the hot cream into the egg yolk mixture to prevent curdling.
Strain Mixture: Pour the combined mixture through a fine mesh sieve into a jug to ensure smoothness.
Bake Custard: Divide the custard mixture evenly into heatproof ramekins. Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins. Bake in the preheated oven until the custard is set but still slightly jiggly in the center, about 20 to 30 minutes.
Cool and Refrigerate: Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours.
Caramelize Sugar: Before serving, sprinkle an even layer of white and brown sugar over the top of each custard. Using a kitchen torch, melt and caramelize the sugar until golden brown. Alternatively, place the ramekins under a broiler for 2 to 3 minutes, watching closely to prevent burning.
