Ingredients:
1 (12 to 14 pounds) whole turkey, thawed if frozen
1 cup kosher salt
1 cup brown sugar
1 gallon cold water
1 onion, quartered
4 cloves garlic, smashed
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 sprigs fresh sage
1/2 cup unsalted butter, softened

Directions:
