6 large egg yolks

⅔ cup milk
1¼ cups heavy cream

2 (3 ounce) packages ladyfinger cookies
1 tablespoon unsweetened cocoa powder
Prepare the custard: In a medium saucepan, whisk together the egg yolks and white sugar until well blended. Add the milk and cook over medium heat, stirring constantly, until the mixture comes to a boil. Let it boil gently for 1 minute, then remove from heat and allow to cool slightly. Cover tightly and refrigerate for 1 hour.
Whip the cream: In a medium bowl, beat the heavy cream and vanilla extract with an electric mixer until stiff peaks form.
Combine mascarpone and custard: Remove the egg yolk mixture from the refrigerator. Add the mascarpone cheese and whisk until smooth.
Assemble the tiramisu: In a small bowl, combine the brewed coffee and rum. Quickly dip each ladyfinger into the coffee mixture, ensuring they are moistened but not soggy. Arrange half of the soaked ladyfingers in the bottom of a 7x11-inch dish.
Layer the dessert: Spread half of the mascarpone mixture over the ladyfingers, then spread half of the whipped cream over that. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and whipped cream.
Chill and serve: Cover and refrigerate the tiramisu until set, 4 to 6 hours. Before serving, dust the top with unsweetened cocoa powder.
