For the crust
1¼ cups graham cracker crumbs
⅓ cup butter, melted
¼ cup white sugar
2 teaspoons ground cinnamon
For the filling
2 (10 ounce) packages frozen sweetened sliced strawberries, thawed and drained
1 tablespoon cornstarch
3 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
¼ cup lemon juice
½ teaspoon vanilla extract
3 large eggs
1 tablespoon water (optional)
Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes. Preheat the oven to 300°F (150°C).
